weirdly enough, while other foods are better (ginataan with most vegetables is a baller, adobo is king) no one beats out paksiw, fish paksiw to be specific
when it's good, it's really good. i've had galunggong, bangus, and tilapia as paksiw and it's incredible. growing up in a lower middle class household, mastery of simple dishes is a must, and mastering paksiw is godsend.
