Warm Spinach Salad with Tuna Prep and Cook Time: 10 minutes
Ingredients:
6 cups baby spinach
2.5 oz canned light tuna
1 TBS extra virgin olive oil
1 tsp fresh lemon juice
1 medium clove garlic
sea salt and pepper to taste
*1/2 medium tomato diced
Directions:
Combine the olive oil, lemon juice, garlic, and salt and pepper to taste in a small sauce pan and heat until warm.
Drizzle over spinach leaves and top with tuna and tomatoes if desired.
