gawin niyo nalang yung authentic na carbonara na egg yolk + cheese yung sauce, mas tipid pa yun kesa sa kung ano mang pinoy version di kailangan ng milkPoor man's Carbonara
1 pack spaghetti (5 servings ata to)
1/2 cup Butter(unsalted)
1/2 cup Flour
1 Medium Sized White Onion
1 pack cheese - kahit ano basta mabilis mag melt
1 Liter milk / 2 evap
salt & pepper (white pepper kung meron)
Meat - Hotdog / Bacon / Spam / Ham (optional kung ano gusto mo Gamitin kahit isa o dalawa lang jan okaya kahit wala)
Water (Just in case)
Step 1 - Cook your meat into your heart's desire (any of those listed), then set aside
Step 2 - Prepare a Boiling water for pasta (syempre pogi points kapag prepared ka and maready mo agad yung food)
Step 3 - Prepare your Onion, cut it in small tiny pieces (kahit i food processor mo)
- Prepare your cheese also, Grate it to make it faster to disolve
- Open your cans of Milk or Prepare mo lang
Step 4 - The most critical and crucial part
- In a cooking pot, make a ROUX, roux is a equal part of Butter & Flour, first heat the pot in a low to medium heat to melt the butter first then put the flour and mix it gently until everything incorporates and turns into a custardy like substance, DO NOT OVER COOK IT! DO NOT STOP STIRRING
- Put milk gradually until it thickens (IT WILL THICKEN EVENTUALLY) pero unti untiin ang gatas ano, hanggang makuha mo yung gusto mong dami ng Sauce mo, eh kung pano naubos na milk mo, just put a lukewarm water (wag na wag ka gagamit ng malamig na tubig!) DO NOT STOP STIRRING
- When it is kinda watery pa or not yet that thick put your ONION & Cheese, timplahan mo na ng salt & pepper para lumasa. unti untiin ang asin! DO NOT STOP STIRRING
- Kapag nakuha mo na yung gusto mong dami and thickness ng sauce it is time to put your MEAT!
- If finished na, Haluin mo pa din sa ilalim hanggang at least 1 minute para MA-STOP NA YUNG PAGLULUTO NG WHITE SAUCE
- Mag PLATING KANA UMAANO KAPA?
REMINDERS!!!
- When STIRRING, importante haluin yung whole pot, meaning pati yung nasa pinaka baba, para maiwasan maluto or masunog yung ROUX!
- Cook in a SLOW PHASE, It takes time para maluto to pero sulit ang pagluluto, hinay hinay lang. from LOW to MEDIUM HEAT lang tayo
- Aldente dapat ang pagkakatira mo sa Pasta mo, any topings (MEAT) pwede dito. White sauce naman eh
- I enjoy mo lang it takes time to master cooking WHITE SAUCE basta tandaan mo lang ang ROUX!
