2 cups uncooked glutinous white rice (sushi rice)
3 cups water
1/2 cup rice vinegar
1 tablespoon vegetable oil
1/4 cup white sugar
1 teaspoon salt

Directions

Rinse the rice in a strainer or colander until the water runs clear. Combine with water in a medium saucepan. Bring to a boil, then reduce the heat to low, cover and cook for 20 minutes. Rice should be tender and water should be absorbed. Cool until cool enough to handle.
In a small saucepan, combine the rice vinegar, oil, sugar and salt. Cook over medium heat until the sugar dissolves. Cool, then stir into the cooked rice. When you pour this in to the rice it will seem very wet. Keep stirring and the rice will dry as it cools.

Mukhang alanganin ako sa glutinous rice. Medyo mahirap i hulma ang sushi. Thank you though.

Ingredients:

  • 2 tasa ng sushi rice (short-grain Japanese rice)
  • 2 1/2 tasa ng tubig
  • 1/3 tasa ng suka para sa sushi (rice vinegar)
  • 3 kutsarang asukal
  • 1 kutsaritang asin
Step by Step:

  1. Banlawan ang Bigas:
    • Ilagay ang sushi rice sa isang maliit na kalanod o colander na may fine-mesh at banlawan ito sa ilalim ng malamig na tumutulong tubig hanggang maging malinaw ang tubig. Ito ay para alisin ang sobrang starch, na maaaring magdulot na sobrang malagkit ng bigas.
  2. Lutuin ang Bigas:
    • Sa isang malaking kaserola, ilahok ang nalabhan na bigas at 2 1/2 tasa ng tubig. Pakuluin ito sa medium-na-apoy.
    • Kapag naglalabas na ng singaw at nagsisimulang magpakulo, bawasan ang apoy sa low, takpan ang kaserola ng maayos na takip, at lutuin ito ng mga 15 minuto. Alamin ang bigas paminsan-minsan para siguruhing hindi ito kumukulo.
    • Pagkatapos ng 15 minuto, tanggalin ang kaserola mula sa init at hayaang ito sa takip pa ng 10 minuto. Ito ay para payagan ang bigas na mag-steam at tapusin ang pagluluto.
  3. Maghanda ng Sushi Vinegar:

    • Habang hinihinalo ang bigas, gamitin ang isang electric fan o karton para maikot ang hangin patungo sa bigas. Ito ay para maipalamig ang bigas at magkaruon ito ng makintab na texture.
    • Magpatuloy sa paghalo at pagsasayaw hanggang ang bigas ay malapit nang maging room temperature.
  6. Takpan ang Bigas:
    • Kapag ang sushi rice ay maayos na inimbento at nalalamig na, takpan ito ng malinis at basang katsa o plastic wrap para hindi ito matuyo habang inihahanda ang mga sangkap para sa sushi.
Ngayon, handa mo nang magamit ang iyong sushi rice para gumawa ng sushi rolls, nigiri, o anumang iba pang uri ng sushi. Tandaan na ang pagsasanay ay nagpapaperpekto, kaya huwag kang manghinayang kung ang unang mga hakbang mo sa paggawa ng sushi ay hindi agad perpekto.
