This refreshing way to enjoy lamb is a perfect salad dish. Serve hot while the flavors of the herbs are at their best.
Ground Lamb Salad Prep and Cook Time: 20 minutes
Ingredients:
1 medium onion, minced
1 TBS low sodium chicken or vegetable broth
4 medium cloves garlic, minced
3/4 lb ground lamb
1 cup frozen peas
1 medium tomato peeled, seeded and diced
2 TBS chopped fresh mint
2 TBS chopped fresh basil
1 TBS chopped cilantro
1 TBS fresh lemon juice
1 head butter lettuce
salt and pepper to taste
Directions:
Heat 1 TBS broth in a 10 inch stainless steel skillet and Healthy Saute onion for 2 minutes and add garlic and ground lamb. Break up lamb well so it is not in big lumps. Continue to saute for another 5 minutes.
Add peas, salt and pepper and cook for another 2-3 minutes, and add tomatoes, chopped fresh mint, basil, cilantro, lemon juice.
Rinse and dry lettuce leaves dis*****ng wilted outer leaves. Place on platter and fill with spoonful of lamb mixture. Roll by hand and eat.
