Bicol Express Recipe



Ingredients:



3 cups coconut milk

2 lbs (800g) pork belly, cut into strips

1/2 cup Shrimp Paste

1 tbsp Garlic, minced

6 pieces Thai chili or Serrano pepper

3 tablespoons minced ginger

1 medium onion, minced

2 tablespoons cooking oil

Salt and Pepper to taste



Cooking Instructions:



1. Heat a pan and then pour-in the cooking oil.



2. Sauté the garlic, onion, and ginger



3. Add the pork and then continue cooking for 5 to 7 minutes or until the colorbecomes light brown



4. Put-in the shrimp paste and Thai chili or Serrano pepper. Stir.



5. Pour the coconut milk in. Bring to a boil. Simmer for 40 minutes or until the pork is tender



6. Add salt and ground black pepper to taste



7. Serve hot.

Bicol Express

Ingredients:
  • tasa ng mga sili (siling haba), hiwain nang pahaba at tanggalan ng buto
  • 1/2 tasa ng hipon o baboy, hiwain nang maliliit (maari rin gumamit ng ibang karne tulad ng manok o isda)
  • 1/2 tasa ng gata ng niyog
  • 1/4 tasa ng dilaw na sibuyas, hiwain nang maliliit
  • 4 butil ng bawang, tinadtad
  • 2 kutsaritang bawang, tinadtad
  • 1 kutsarang luya, tinadtad
  • 1 kutsaritang alamang (optional)
  • Mantika para sa pag-gisa (kung gusto mo, maari kang gumamit ng cooking oil o pork fat)
Paraan ng Pagluluto:

  1. Sa isang kawali o kaserola, magpainit ng mantika sa katamtamang apoy. Kung gusto mo ng mas tradisyonal na lasa, maari kang gumamit ng alamang para sa pag-gisa. I-gisa ang dilaw na sibuyas, bawang, luya, at alamang (kung ginagamit) hanggang maging malambot ang sibuyas.
  2. Idagdag ang hiwain nang maliit na karne (hipon o baboy) sa kawali. I-gisa ito hanggang maging kulay brown ang karne.
  3. Ilagay ang hiwain nang pahaba at tanggalan ng buto na mga sili sa kawali. Gawing maingat ito dahil maari itong magdulot ng maanghang na usok kapag ito ay niluto. I-gisa ito ng ilang minuto.
  4. Ilagay ang gata ng niyog sa kawali. Haluin ito nang maigi hanggang maging homogenous ang sauce at makulay ito.
  5. Pakuluin ang Bicol Express sa katamtamang init ng apoy. Lutuin ito ng mga 15-20 minuto o hanggang sa maluto ang karne at malasa na ang sauce. Maari mong dagdagan ng asin at paminta ayon sa iyong panlasa.
  6. Kapag maluto na, alisin ang Bicol Express sa kawali at ilagay ito sa isang serving dish.
  7. I-enjoy ang Bicol Express kasama ng mainit na kanin.
Tandaan na maari mong baguhin ang dami ng sili o ang uri ng karne na ginagamit mo depende sa iyong panlasa. Kung gusto mo itong mas maanghang, maari kang magdagdag ng higit pang sili. Huwag kalimutan ang mainit na kanin para maipantapat sa maanghang na lasa ng Bicol Express. Enjoy :)
