Makes 6 servings
*. 1/2 pack of Spaghetti (or any pasta, e.g. elbow, shell, etc.)
*. 1 clove of garlic, crushed
*. 1/2 onion, chopped
*. 2 tbsp Harvest Vegetarian Broth
*. 1/4 cup celery, thinly sliced
*. 1/4 cup carrots, julienned or in small cubes
*. 1/2 cup cabbage, shredded
*. 3 cups water
*. 3 cups soymilk
*. 3 vegan hotdogs - thinly sliced to pieces
*. 1 tbsp cooking oil
*. 1/2 teaspoon of pepper (or more to adjust to taste)
DIRECTIONS
1. In a pot, boil the pasta and add some salt so they won’t stick. Mix occasionally. Remove pasta once tender.
2. In another pot, heat the oil
3. Add garlic until light brown
4. Add onions, saute until tender
5. Add 3 cups of water and vegetable broth
6. Mix and Simmer for 3 minutes over medium heat
7. Add carrots and celery, stir, then simmer until near boiling
8. Add soy milk, cabbage and hotdog (I fried my hotdogs first before adding to the mix-optional)
9. Add pepper to taste
10. Bring to a boil and you’re done
